It has long been my dream to open Morning Glory Signature. Having worked for over 30 years in various kitchens – first my parents’ and later in my own restaurants, I have acquired a great passion for cooking and the wonderful ingredients that we are so lucky to have here in Hoi An. However, as so many other projects got in the way, it is only recently that I found the time to create this new venture. For me, the Morning Glory Signature menu is a thank you to all the teachers, guests, suppliers and others who have given me the inspiration and encouragement to push forward and strive to find more outlets for my passion.
This is a deeply personal selection of dishes using only the highest quality native ingredients. Each dish has a story behind it and all have a special place in my heart. Some are new or reimagined versions of more traditional dishes, but all carefully maintain the essence of what Vietnamese cuisine means to me – a glorious blending of flavours, aromas and textures. It goes beyond feeding the body – it is as much about recharging my spirit. The eating experience itself is also important here – the anticipation of the meal to come, the ambience, and the accompanying conversation over a shared meal etc.
